Garden – Herb – Pesto with Walnuts

Ingredients for 3 servings:

  • 1 bunch of mixed herbs
  • 50 g Parmesan
  • 1 handful of walnuts
  • 6 tbsp olive oil
  • 2 garlic cloves
  • possibly salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the herbs and pick them off the stems. Roughly chop the Parmesan cheese and peeled garlic and place them in a tall bowl with the walnuts. Gradually add the olive oil and puree with a whisk (magic wand). The olive oil quantity is approximate. I picked a large bunch of herbs (pineapple sage had the largest proportion) and added the oil until the consistency seemed creamy enough. It was absolutely delicious with spaghetti. If you like, you can add salt and pepper, but the wonderful herbal flavor was enough for us. It smelled like the South.
