Ingredients for 1 servings:
- 100 g wheat flour
- ½ pack of baking powder
- 75 g sugar
- 1 sachet of vanilla sugar, or the pulp of a vanilla pod
- 3 m.-sized eggs
- 2 tbsp oil
- 1 tbsp vinegar
- 2 cups of cream
- 2 bags of cream stiffener
- 250 g quark, 20% fat
- 1 sachet of Gelatin Fix
- 3 medium-sized apples
- 80 g raisins
- ½ tsp cinnamon
- 1 tbsp honey
- 1 bag of cake glaze, clear
- 80 g almond flakes
Instructions
Working time approx. 40 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 55 minutes
Whisk the sugar, vanilla, eggs, oil, and vinegar vigorously. Mix and sift in the flour and baking powder, then whisk for one minute. Bake in a springform pan lined with baking paper in an oven preheated to 180°C (350°F) for 15-20 minutes. Remove the base from the pan and let it cool, then place it in a cake ring around the cake. Topping 1: Whip the cream with the cream stiffener. Gradually mix the quark with the gelatin fix, fold in the cream, and pour over the cake. Chill. Topping 2: Toast the flaked almonds in a pan. Remove from the pan. Peel and dice the apples, and sauté in the pan. Add the honey and cinnamon, and add the raisins. Let cool. Prepare the glaze, fold in the apple mixture, and pour over the quark and cream. (If you like glaze, you can also use two sachets of glaze.) Sprinkle the flaked almonds on top. Chill for two hours.
