Garden Tomato Soup

The perfect garden tomato soup recipe with a picture and simple step-by-step instructions.

  • 500 g Tomatoes
  • 1 Onion
  • 1 Handful Herbs (basil, thyme, oregano)
  • 1 Clove of garlic
  • 750 ml Vegetable broth
  • 1 pinch Cinnamon
  • 2 Pinches Cayenne pepper
  • Olive oil
  • 1 Handful Arugula
  1. Roughly chop the onion and garlic and sauté in olive oil.
  2. Halve / quarter the tomatoes and add. Add herbs (whole). Pour in the broth.
  3. Simmer gently for 30 minutes.
  4. Put the soup in a sieve (on a saucepan!) And squeeze the tomatoes with a potato masher.
  5. Bring the soup to the boil and season with cinnamon and cayenne pepper.
  6. Chop the rocket and sprinkle on the soup.
