Garden Tomato Soup
The perfect garden tomato soup recipe with a picture and simple step-by-step instructions.
- 500 g Tomatoes
- 1 Onion
- 1 Handful Herbs (basil, thyme, oregano)
- 1 Clove of garlic
- 750 ml Vegetable broth
- 1 pinch Cinnamon
- 2 Pinches Cayenne pepper
- Olive oil
- 1 Handful Arugula
- Roughly chop the onion and garlic and sauté in olive oil.
- Halve / quarter the tomatoes and add. Add herbs (whole). Pour in the broth.
- Simmer gently for 30 minutes.
- Put the soup in a sieve (on a saucepan!) And squeeze the tomatoes with a potato masher.
- Bring the soup to the boil and season with cinnamon and cayenne pepper.
- Chop the rocket and sprinkle on the soup.
