Ingredients for 2 servings:
- 700 g salmon fillet(s) with skin
- 150 g butter
- 2 garlic cloves
- 1 tbsp honey
- salt and pepper
- 1 lemon(s)
- Parsley
- 50 g Parmesan, freshly grated
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Debone the salmon fillet, rinse, and place skin-side down on a piece of aluminum foil. Score the fish, but don’t cut all the way through! Season the fillet and chill. Meanwhile, warm the butter in a saucepan. Meanwhile, add the chopped garlic, honey, and the juice of half a lemon and heat briefly. Pour the garlic butter over the fillet. Sprinkle with Parmesan and parsley. Slice the remaining lemon and spread it over the fish. Steam in an oven preheated to 180°C (convection oven) for about 20 minutes on the middle rack. We served it with baked potatoes. Note from Chefkoch.de: If you don’t want to use aluminum foil, use parchment paper or baking paper, or a casserole dish with a lid. This is recommended for ecological and health reasons. Aluminum foil lined with baking paper on the food-facing side has also been available for some time, and this is also recommended.
