Ingredients for 1 servings:
- 500 g butter
- 2 bulbs of garlic
- 1 tsp harissa paste
- 1 dash of olive oil
- e.g. salt and pepper

ideal for grilling
Allow the butter to soften at room temperature so it’s easier to work with later. Cut open the garlic bulbs at the stalk so the cloves are free but still held together inside the bulb. Brush with plenty of oil, season generously with salt, and bake in the oven at 200°C (top/bottom heat) for about 45 minutes. The cloves should be nice and soft; you may need to allow a longer oven time. Remove the garlic from the oven and let it cool. Once the garlic bulbs have cooled, carefully press the cloves out of their skins and add them to the butter. Add the harissa paste and olive oil, and season with salt and pepper to taste. Mix thoroughly with a fork, then chill until ready to serve.
