Ingredients for 1 servings:

  • some stalks of lovage
  • 250 ml rapeseed oil

Wash the lovage and separate the leaves from the thick stems. Blend thoroughly in a blender or with a hand blender, adding a little oil as you go. Pour the lovage puree into a container and mix with the remaining oil. Cover and let stand at room temperature for 1 to 2 days, depending on how intense you want the lovage aroma to be. Then, ideally, strain the mixture through a coffee filter. If necessary, weigh the puree down with an object to retain as much oil as possible. Pour into a jar, store in the refrigerator, and use within a few days for seasoning. The oil tastes delicious in vegetable dishes, but it also adds a special flavor to salad dressings.
