Ingredients for 4 servings:
- 1.6 kg chicken drumstick(s) or other chicken parts
- 20 ml olive oil
- 40 thick garlic cloves
- 1 small bunch of thyme
- 2 small bunches of flat-leaf parsley
- 1 bay leaf
- salt and pepper
- 400 ml vegetable stock
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 50 minutes; Total time approx. 2 hours 10 minutes
Season the chicken pieces well with salt and pepper, then sear them well on all sides in olive oil. Layer the chicken pieces in a roasting pan, alternating with garlic, thyme, and bay leaves. Add a little broth and braise in the roasting pan for about 1.5 hours. Remove the chicken pieces from the roasting pan and pour the broth through a fine sieve. Remove the bay leaf, then press the unpeeled garlic through the sieve with a wooden spoon. Bring to a boil and season with salt and pepper, then pour the broth over the chicken pieces. Flatbread goes well with this dipping sauce.
