Ingredients for 1 servings:

  • 120 g flour (wholemeal)
  • 140 g flour, type 405
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 60 g nuts (pecan) or walnuts, chopped
  • 120 g date(s), chopped
  • 1 egg(s)
  • 90 g brown sugar
  • 80 ml vegetable oil
  • 1 tsp vanilla sugar
  • 250 g yogurt
  • 160 g buttermilk
  • Nuts (pecan) or walnuts for decoration

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with buttermilk, for 12 muffins

First, preheat the oven to 180 degrees Celsius. Then, grease a muffin tin or line it with paper baking cups. In a bowl, combine both types of flour, baking powder, baking soda, nuts, and date pieces. In a second bowl, lightly whisk the egg, add the sugar, oil, vanilla sugar, yogurt, and buttermilk, and mix well. Then, add the flour mixture to the wet ingredients and stir just until combined. Pour in the batter and place a walnut half on top of each muffin. Bake in the center of the oven for 20-25 minutes. Let cool for 5 minutes.
