Garlic eggplants

Ingredients for 2 servings:

  • 6 cloves garlic
  • 1 bunch of thyme
  • Oil (olive oil)
  • 2 eggplant(s)
  • Salt
  • pepper
  • 5 tomatoes
  • 1 bunch of basil
  • 1 pinch(s) of sugar

Instructions

Working time approx. 1 hour; Rest time approx. 6 hours; Total time approx. 7 hours

Cut the garlic into sticks and marinate in olive oil with the thyme sprigs for several hours. Peel the eggplants into strips and stud them with garlic. Season with salt and pepper. Place in a baking dish and pour over the remaining oil. Place the thyme sprigs between the strips. Bake in the oven at 200°C for 1 hour. Dice the tomatoes and mix with 4 tablespoons of olive oil, chopped basil, pepper, salt, and sugar. Cut the eggplants into thick slices and serve with the tomatoes. Serve with baguette.
