Tomato and zucchini braised vegetables

Ingredients for 2 servings:

  • 3 tomatoes
  • 1 zucchini
  • 2 large onions
  • possibly Tabasco, some dashes OR:
  • ½ tsp Sambal Oelek, as needed
  • salt and pepper
  • some basil, dried
  • some water
  • Olive oil, for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

ideal when you need something quick and tasty with grilled meat

Peel and finely chop the onion. Heat the oil in a large saucepan and fry the onions until translucent. Wash the zucchini, cut into small cubes, and add to the onion. Wash and chop the tomatoes, and add them to the saucepan. Sauté everything together for about 5 minutes, stirring frequently. Then deglaze with a little water and season with salt, pepper, and dried basil. If you like it spicy, add a few dashes of hot sauce (e.g., Tabasco) or 1/2 teaspoon of sambal oelek and stir in. The vegetables can be eaten as is, especially when you’re in a hurry. They also taste delicious cold or with grilled meat!
