Garlic soup

Ingredients for 4 servings:

  • 2 bulbs of garlic
  • 400 ml vegetable broth or chicken broth
  • 400 ml white wine
  • 400 ml cream
  • 3 potatoes
  • 3 tbsp olive oil
  • salt and pepper
  • Crème fraîche

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Hardly any odor because it is cooked for a long time!

Mince the garlic and sauté in oil. Do not let it brown, as the garlic will react bitterly. Refresh the pan with stock, add the wine and cream, and simmer for about 90 minutes. Meanwhile, cook and peel the potatoes; they will be used later to thicken the soup. After 90 minutes, chop everything with a whisk, gradually adding the chopped potatoes until the desired consistency is reached. Season with salt and pepper, and serve with a little crème fraîche.
