Ginger Chocolate Mousse

Ingredients for 4 servings:

  • 200 g dark chocolate (70% or higher)
  • 200 ml cream
  • 50 g sugar
  • 50 g butter
  • 3 eggs
  • 40 g candied ginger
  • 1 tbsp water, hot

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

First, separate the eggs and set the yolks aside. Finely grate the ginger. Whisk the egg whites and the cream until stiff peaks form. Melt the chocolate and butter in a double boiler over medium heat. Meanwhile, whisk the egg yolks in a large bowl with the tablespoon of hot water until creamy. Then stir in the sugar and ginger. Now fold in the melted butter and chocolate mixture. Then, using a whisk, fold in the beaten egg whites and cream. Chill the mousse in the refrigerator for a good 2 hours. Serve as dumplings with small pieces of candied ginger!
