Ingredients for 1 servings:

  • 250 g flour
  • ¼ tsp baking powder
  • 1 pinch of salt
  • 200 g butter
  • 200 g brown sugar
  • 1 egg(s)
  • 50 g ginger, finely chopped candied
  • 50 g almonds, peeled, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Finely chop the ginger. Combine the ingredients in a bowl and mix well. Quickly knead the dough, shape into 3 logs (approx. 3 cm in diameter), and wrap in foil. Refrigerate for at least 2-3 hours. Cut the logs into 1 cm thick slices and place on a baking sheet lined with baking paper. Don’t pack them too tightly, as the dough will spread. Bake at 180°C for approx. 10-15 minutes until golden brown. Decorate the cookies as desired!
