Ginger cookies with chocolate glaze

Ingredients for 1 servings:

  • 200 g flour
  • 1 pinch of baking powder
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 150 g butter or margarine, soft
  • 2 tsp ginger powder, or fresh
  • 1 pinch of salt
  • 50 g ginger root, candied, chopped into fine pieces
  • e.g. couverture or chocolate

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Using a dough hook, combine all the dough ingredients until you have a smooth dough. Chill for a while, but it’ll work just fine. Preheat oven to 180°C. Form about 60 small balls and flatten them crosswise with a fork. Dip the fork in flour if necessary. Bake for about 10 minutes. Once cooled, cover with chocolate coating, e.g., dip the cookies halfway in. Store in a cookie tin.
