Ingredients for 1 servings:
- 2 tbsp flaxseed meal
- 4 tbsp water
- 60 g oat flakes
- 90 g flour (e.g. rye flour)
- 40 g margarine
- 2 tbsp plant drink (e.g. oat drink)
- 3 cm ginger, approx. 15 g, peeled and finely grated
- 1 tsp baking powder
- 1 tsp seeds (e.g. flaxseed or sunflower seeds)
- 0.33 tsp white pepper
- ½ tsp cinnamon powder
- 5 tbsp agave syrup
- 2 tbsp lemon juice
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
vegan, vegetarian, no granulated sugar, makes about 15 cookies
Allow the flaxseed meal to swell in the water. Knead it with all the other ingredients, then place approximately 15 walnut-sized cookies onto a baking sheet lined with baking paper and press them down slightly. Bake on the middle rack of an oven preheated to 170°C (top/bottom heat) for about 20 minutes.
