Ingredients for 1 servings:
- 1 kg flour
- 500 g honey
- 250 g sugar
- 125 g butter
- 1 egg(s)
- 10 g gingerbread spice
- 10 g potash
- 10 g ammonium bicarbonate
Instructions

with potash and hartshorn salt
Dissolve the potash and ammonium hydroxide in 1/4 cup of lukewarm water. Dissolve the butter, sugar, and honey in a saucepan over low heat. Let cool thoroughly. In a bowl, combine the flour and gingerbread spice. Add the cooled honey mixture, egg, and dissolved potash with the ammonium hydroxide. First, knead thoroughly with a hand mixer fitted with a dough hook. Once the mixture is fairly smooth, continue kneading thoroughly by hand. The dough should be glossy. Sprinkle a little flour over it and let it rest for 1-3 days. Then divide the dough in half and knead each one again. Then you can roll out the dough and cut out cookies. Bake them at 200°C for about 7 minutes. They should not overcook. The gingerbread cookies can then be decorated as desired.
