Ingredients for 1 servings:

  • 500 g flour
  • 250 g sugar
  • 200 ml plant milk (plant drink)
  • 1 packet of baking powder
  • ½ package of gingerbread spice
  • 4 tbsp baking cocoa
  • 4 tbsp sunflower oil or rapeseed oil, not olive oil
  • Almond(s)
  • Chocolate glaze
  • Sugar decoration

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Mix all the dough ingredients together (by hand or with a dough hook). I always add a little more flour until the dough is thick enough to be less sticky. If it becomes too crumbly, add a little more plant-based milk. Sprinkle with flour and roll out the dough, turning it over once if possible. The dough needs to stay thick, so only roll it out to about 1 cm thick. This is enough dough for one baking tray. Then cut it out or stamp it out. I always make gingerbread men and stars. If you like, you can top the dough with almonds. Bake at 200°C (fan oven) for 15-20 minutes. Once cooled, the gingerbread can be decorated, for example with chocolate glaze and sugar sprinkles. This way you can give the gingerbread men a face and buttons, for example.
