Gingerbread balls with no added sugar and no baking

Ingredients for 1 servings:

  • 4 tsp gingerbread spice (for children with Ceylon cinnamon and a little pepper)
  • 100 g almonds, ground
  • 50 g oat flakes, very fine
  • 150 g pitted soft dates
  • 1 tsp honey (optional)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

with the sweetness of dates

Heat the spices with the almonds and oats in a pan. Optionally, add the honey and heat. Process the mixture with the dates in a high-performance food processor until smooth. The mixture will seem a bit dry, but will become smooth with pressure. Form the mixture into small balls, applying a little pressure. The balls taste best fresh, or within the first 48 hours. The balls will stay fresh for a few days in the refrigerator. The flavor will change slightly, as the spices react differently over time (some become more intense, others evaporate).
