Swedish Nuts – candied nuts from the oven

Ingredients for 1 servings:

  • 200 g nuts, e.g. walnut halves, pecan halves or mixed
  • 1 egg white
  • ½ tsp cinnamon powder
  • 2 tsp vanilla sugar
  • 100 g sugar
  • 1 pinch of salt
  • 50 g butter for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Preheat the oven to 160-180°C. Melt the butter in a sufficiently large baking dish. Meanwhile, combine the sugar, cinnamon, and vanilla sugar. Beat the egg whites with the salt in a wide bowl until stiff peaks form. Fold in the sugar mixture in 3 batches. Add the nuts to the beaten egg whites and stir with a spatula until all the nuts are coated with the egg white mixture. Pour the nut mixture into the dish and spread it out with a spatula or a spoon so that the nuts are in a single layer. Bake on the middle rack for about 30-40 minutes, stirring and turning every 10 minutes. The butter will be absorbed by the nuts during baking. Allow to cool completely and then transfer to screw-top jars. The nuts will keep for at least 1 week.
