Ingredients for 1 servings:
- 500 g flour
- 1 tsp baking soda
- 2 tbsp ginger
- 2 tbsp cinnamon powder
- ½ tsp clove powder
- ¼ tsp nutmeg
- ½ tsp salt
- 125 g butter
- 125 g sugar
- 1 egg(s)
- 200 ml beet syrup
- 2 tbsp water
- 1 egg white
- 1 pinch of salt
- 200 g powdered sugar

Measure the flour, baking soda, and spices, mix, and set aside. Beat the butter and sugar with a hand mixer until light and fluffy. Beat in the egg, then add the syrup. Add two tablespoons of water at a time, continuing to beat on low speed. Then briefly fold in the dry flour mixture (do not overmix, or the biscuits will become hard. Add another tablespoon of water if necessary). Divide the dough in half, shape each half into a thick disc, wrap in plastic wrap, and refrigerate for one hour. Preheat the oven to 175°C (350°F). Line two baking sheets with parchment paper. Roll out the gingerbread dough on a floured surface to a thickness of about 5 mm (0.20 in) and cut out shapes using a gingerbread man cutter. Place the cookies on the baking sheet, not too close together, and bake for about 10 minutes. Let the gingerbread men cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely. To decorate, beat the egg whites with a pinch of salt and powdered sugar for two minutes with a hand mixer. Fill the icing into a disposable piping bag or a freezer bag. Cut off a corner of the freezer bag and decorate the gingerbread men as desired. We wrote the names on them and used them as place cards for the Christmas menu!
