Gingerbread Parfait

Ingredients for 4 servings:

  • 3 cups of cream
  • 3 packets of vanilla sugar
  • 7 gingerbread (chocolate gingerbread)
  • 2 tsp cinnamon
  • 1 jar sour cherries
  • ¼ liter red wine
  • some cornstarch

Instructions

Working time approx. 20 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 20 minutes

Whip the cream until stiff. Remove the wafers from the chocolate gingerbread and crumble them into small pieces. Stir the vanilla sugar, cinnamon, and gingerbread crumbs into the cream and pour the cream into a square freezer container. Let it sit in the container for about 6 hours before freezing. Remove the frozen parfait from the freezer about half an hour before serving. Just before serving, bring the sour cherries, their juice, and the red wine to a boil. Then thicken with a little cornstarch and serve the cherry sauce hot with the parfait. We only ever have this as a dessert at Christmas!
