Ingredients for 1 servings:

  • 4 eggs
  • 250 g powdered sugar
  • 400 g flour, gluten-free
  • 1 tsp baking powder
  • 2 packs of gingerbread spice
  • 1 egg yolk
  • some water
  • Almond(s), halves, peeled

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 40 minutes

Beat the eggs and sugar until frothy. Sift the flour mixed with the baking powder over the dough and stir in. Add the almonds and gingerbread spice and knead everything into a dough. Refrigerate the dough for about 2 hours. After it has rested, roll out the dough on a floured surface to a thickness of about 1 cm, cut into rectangles, and place on a greased baking sheet. Whisk the egg yolk with a little water and brush the slices with it. Decorate them as desired with the almond halves and bake at 180°C for about 10 minutes.
