Gitta's braised cucumbers

Ingredients for 4 servings:

  • 2 cucumbers (approx. 1 kg)
  • 1 onion(s)
  • 300 g Cabanossi
  • 1 small can of tomato paste
  • 200 g crème fraîche
  • 1 bunch of dill
  • Sugar
  • Margarine for frying
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

My ex-mother-in-law’s secret recipe

Wash the cucumbers, halve them lengthwise, and remove the seeds with a teaspoon. Peel the onion. Dice the cucumbers and onion. Halve the Cabanossi sausages lengthwise and slice them. Heat the margarine and fry the sausage in it until browned. Add the onion and sauté until soft. Add the cucumbers and fry everything over low heat for about 5 minutes. Mix the crème fraîche with the tomato paste, pour over the sausage and cucumber mixture, and season with salt, pepper, and sugar. Wash and chop the dill, and add it as well. Simmer everything over low heat for about 20 minutes. Boiled potatoes go well with it. This is a very delicious recipe from my ex-mother-in-law, who unfortunately never really shared it. The only thing I managed to coax out of her were the ingredients. The quantities can therefore vary depending on your taste. Just give it a try. With 4 servings, one serving has 553 kcal.
