Glass noodle salad with fresh cucumbers

Ingredients for 4 servings:

  • 200 g glass noodles
  • 2 large carrots
  • 2 bell peppers
  • 2 garlic cloves
  • 1 large cucumber(s)
  • 1 tsp herbal vinegar
  • 1 tsp balsamic cream
  • possibly soy sauce
  • some salt
  • tbsp oil

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Total time approx. 20 minutes

Pour hot water over the glass noodles and let them stand for 10 minutes. Meanwhile, peel and grate the carrots. Clean the bell peppers and slice them into thin strips. Heat the oil in a pan and briefly sauté the vegetables. Finely chop the garlic, add it to the vegetables, and sauté for another half minute. Season with salt. Wash the cucumber and slice it into thin strips. Now mix all the ingredients together. Season with balsamic vinegar and herb vinegar. Stir in soy sauce to taste.
