Zucchini and apple gratin

Ingredients for 2 servings:

  • 500 g zucchini
  • 2 apples
  • 2 eggs
  • 100 ml cream (canned milk also works)
  • salt and pepper
  • Thyme or other herbs
  • 100 g grated cheese, e.g. Gouda

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Preheat the oven to 195°C (top/bottom heat). Wash the zucchini and cut into thin slices (approx. 0.5 cm). Wash the apples, but do not peel them, quarter them, and remove the cores. Slice the apple quarters. Lightly grease a baking dish. Layer zucchini and apple slices alternately. Mix the cream, eggs, and Gouda cheese and season with salt, pepper, and thyme. Spread the egg and cream mixture evenly over the zucchini and apple slices. Bake the gratin for about 30 minutes. Make sure it doesn’t overcook; cover with aluminum foil if necessary.
