Glass noodles with beef

Ingredients for 2 servings:

  • 2 pak choi
  • 1 bell pepper(s), red
  • 1 carrot(s)
  • 200 g beef
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 200 g glass noodles
  • e.g. water, boiling
  • 2 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp sambal oelek
  • salt and pepper
  • 1 chili pepper(s), red
  • 2 tbsp sweet chili sauce (Thai chili sauce)
  • 50 ml broth
  • 1 tsp flour
  • e.g. cashew nuts
  • possibly chopped coriander

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Thinly slice the vegetables and set aside. Also thinly slice the beef and toss with a little soy sauce and flour. Pour boiling water over the glass noodles, let stand for 2-3 minutes, and then drain the water. Place the noodles in a large bowl. Sauté the meat and cashew nuts in sesame oil, season with salt and pepper, and add to the glass noodles. Sauté the vegetables in a little vegetable oil and add to the noodles and meat. In a pan, sauté the garlic and ginger paste with the sambal oelek and deglaze with soy sauce and broth. You can use beef, chicken, or vegetable broth, depending on your taste. Then add the mixture to the other ingredients in the bowl. Add the sweet chili sauce and season to taste. If you like, you can add freshly chopped cilantro. Mix everything well in the bowl and serve on plates.
