Ingredients for 4 servings:

  • 8 salted herring (fillets with skin) cut into 2-3 cm long pieces
  • 200 ml vinegar (wine vinegar)
  • 200 ml water
  • 2 tbsp sugar
  • 2 onions, thinly sliced
  • 2 carrots, cleaned and blanched in thin slices
  • 1 piece(s) horseradish (1cm), cleaned and cut into thin slices
  • 1 piece(s) ginger (1cm), peeled and thinly sliced
  • 1 tsp mustard seeds
  • 10 grains of allspice
  • 5 peppercorns
  • 2 small chili peppers, whole
  • 3 small bay leaves
  • 1 bunch dill, tips picked

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes

pickled salted herring from Sweden

Bring the vinegar, water, and sugar to a boil and let it cool; the sugar should be completely dissolved. Layer the herring and chopped vegetables in a lidded jar, adding a little of the spices to each layer. Once all the ingredients are in the jar, pour in the cold marinade; it should cover the entire jar. Cover and let it marinate in the refrigerator for at least 2-3 days.
