Ingredients for 10 servings:

  • 12 fish fillets (matjes or herring fillets)
  • 400 g onion(s)
  • ¼ liter wine, red, dry
  • ¼ liter vinegar (white wine vinegar)
  • 250 g sugar
  • 2 bay leaves
  • 2 carnations
  • 1 tsp mustard seeds
  • 1 tsp black pepper, whole

Instructions

Working time approx. 20 minutes; Rest period approx. 2 days; Total time approx. 2 days 20 minutes

Cut the fish into bite-sized pieces and the onions into rings. Bring the red wine, vinegar, and remaining ingredients to a boil. Add the onions and bring back to a vigorous boil. Allow to cool. Layer the onion rings and fish in a bowl and pour over the stock. The fish must be completely covered. Let it marinate in a cool place for at least 2 days.
