Glazed Ham

Ingredients for 12 servings:

  • 1 cup sugar, brown
  • 1 whole cured ham with rind
  • ¼ cup mustard, mild
  • 1 jar whiskey (bourbon)
  • 6 slices of pineapple
  • 6 cherries (cocktail cherries)

Glazed ham, a traditional American Christmas or Thanksgiving dish.

You’ll probably have to pre-order the ham from the butcher in Germany. A cup holds 240 ml. Preheat the oven to 125 degrees Celsius. Score the rind of the ham diagonally with a carpet knife (works best). Don’t cut too deeply. Score the strips about 2 cm apart. Repeat this process all the way around, then in the other direction, creating a diamond pattern. Wrap the ham completely in aluminum foil and bake for 3.5-4 hours. Remove the aluminum foil and carefully peel back the rind, but don’t remove it completely. Increase the oven temperature to 175 degrees Celsius. Brush the ham with whiskey, then spread with mustard. Wrap the ham in brown sugar. This is a bit tricky, so it’s best to use both hands. Fold the rind back over, securing it with toothpicks if necessary. Insert a meat thermometer into the ham. Return the ham to the oven, this time without foil, and bake for at least 1 hour until the meat thermometer registers 75-80 degrees Celsius. Remove and let rest for 15 minutes. Arrange on a platter and decorate with pineapple slices, each with a cherry in the center. The pan juices make an excellent sauce.
