Glazed Meatballs and Spicy Potatoes with Tomato Salsa

The perfect glazed meatballs and spicy potatoes with tomato salsa recipe with a picture and simple step-by-step instructions.

Tomato salsa

  • 6 Tomatoes
  • 1 small Red onion
  • 2 tbsp Sweet Chili Sauce – see my KB: http://www./rezept/444811/Sweet-Chili-Sauce.html
  • 2 tbsp Sherry vinegar
  • 1 tbsp Olive oil
  • Raw cane sugar
  • Salt
  • Black pepper from the mill

spicy potatoes

  • 400 g Potatoes
  • 0,5 tsp Salt
  • 0,5 tsp Espelette pepper
  • 50 g Panko flour
  • 3 tbsp Oil

  • 300 g Ground beef
  • 1 disc Whole grain toast
  • 1 Egg
  • 2 tsp Dijon mustard
  • 1 tbsp Finely chopped red onion
  • Salt
  • Black pepper from the mill
  • 2 tbsp Cane sugar
  • 300 ml Clear apple juice
  • 2 tbsp Soy sauce
  • Oil

Otherwise

  • 0,5 Avocado
  • 2 Spring onions, cut into thin rings
  • 1 tbsp Lemon juice

  1. Peel and cut the potatoes into wedges and place in a bowl. Add the salt, the pimento d’Espelette and the panko flour as well as the oil and mix everything really well and then put in an ovenproof dish.
  2. Then place everything in the oven preheated to 180 degrees for approx. 45 – 50 minutes, turn once after half the time.

  1. Quarter, core and drain the tomatoes, then cut into fine cubes and place in a bowl. Finely dice the red onion and then add to the tomatoes. Add the chilli sauce, vinegar and oil, mix and then season with sugar, salt and pepper.

  1. Crumble the toast in a bowl, add the minced meat, the egg, the mustard and the diced onion as well. Season with salt and pepper, knead well and then shape into small meatballs.
  2. Heat some oil in a pan and then fry the meatballs on both sides, then remove and add the raw cane sugar to the frying fat and let it caramelize. Then deglaze with the apple juice and soy sauce and let everything boil down a little thick for about 6 minutes.
  3. Then add the meatballs again and simmer for about another 5 minutes – swirling every now and then – until a nice film has formed around the meatballs.

  1. Put the spring onion rolls in a bowl. Peel and finely dice half the avocado and add to the spring onions, add the lemon juice and mix well.
  2. Arrange the potatoes on a plate, pour some tomato salsa over the potatoes. Add the meatballs and sprinkle with the spring onion and avocado mixture.
