Ingredients for 4 servings:
- 1 duck(s), ready to cook approx. 2.3 kg
- 2 tsp coriander seeds
- salt and pepper
- 1 orange(s), untreated
- 50 g ginger
- 1 bunch of coriander
- 70 g liquid honey
- 2 tsp gingerbread spice
- 3 tbsp chili sauce, sweet and spicy
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 30 minutes
Wash the duck inside and out and pat dry thoroughly, then season with salt and pepper. Cut the orange into pieces. Peel and thinly slice 30g of ginger. Add both to the duck along with half of the coriander leaves and the coriander seeds, and tie the legs together. Preheat the oven to approximately 225°C (top/bottom heat), place the duck in a roasting pan, and roast for 2 hours. Peel and finely chop the remaining ginger. Mix with the honey, gingerbread spice, and chili sauce. 45 minutes before the end of the cooking time, reduce the heat slightly and brush the duck with 1/3 of the honey glaze. Remove the lid from the roasting pan and repeat the process two more times. Serve the duck garnished with the remaining coriander. Serve with stir-fried vegetables and rice.
