Glazed thyme and honey carrots with lime yogurt

Ingredients for 4 servings:

  • 1 tbsp coriander seeds, roasted and lightly ground
  • ½ tsp fennel seeds, roasted and lightly ground
  • 600 g carrot(s), peeled and cut into equal-sized sticks
  • 30 g honey (thyme honey), liquid
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 thyme sprig(s), plucked
  • 1 pinch of sea salt
  • 1 pinch of ground pepper
  • 50 g Greek yogurt
  • 1 tbsp lime juice
  • 1 lime(s), unsprayed, zest
  • ½ garlic clove(s), squeezed

Roughly grind the coriander and fennel seeds and roast them in a pan without any fat for 2-3 minutes. The seeds should not burn; only the essential oils should be released. Now mix all the spices together with the honey, olive oil and lime juice to make a marinade. Add the sliced ​​carrots to the marinade and mix everything well so that the carrots are completely coated with the marinade. Preheat the air fryer to 200°C and braise the carrots in the baking tray and Quick Clean Basket for 20-25 minutes until soft. In the meantime, mix the yogurt with the remaining ingredients and season with a little sea salt. Tip: If you want to add other vegetables, you can use beetroot or other colored carrots.
