Ingredients for 1 servings:
- 1 kg apples, sour
- 5 eggs
- 125 g butter
- 250 g sugar
- 500 g quark
- 100 g corn semolina
- ½ lemon(s), juice and grated zest
- e.g. cinnamon
- 50 g ground almonds
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours
with corn semolina and quark
Peel the apples, cut into eighths, and cut into small wedges. Drizzle with lemon juice to prevent the pieces from browning. Separate the eggs. Beat the egg whites with 100g of the sugar until stiff. Beat the egg yolks with the remaining sugar, the butter, and the lemon zest until creamy. Add the quark and semolina. Then fold in the beaten egg whites and apples. Bake in a greased springform pan sprinkled with ground almonds at 175°C for 90 minutes. Check after 1 hour; cover with aluminum foil if the cake is getting too dark.
