Gluten-free Nutella cookies

Ingredients for 1 servings:

  • 150 g flour, gluten-free
  • 2 eggs
  • 1 tsp psyllium husks
  • 1 tsp baking powder, gluten-free
  • 1 shot of milk, lactose-free
  • 200 g Nutella or other hazelnut spread
  • some powdered sugar
  • some chocolate coating, gluten-free, or powdered sugar, …..

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Preheat the oven to 180 degrees Celsius. Sift the flour and psyllium husks into a bowl. Add the eggs and beat. Add the Nutella and baking powder and beat again. Add a splash of milk to prevent them from drying out. This happens more quickly than with flours containing gluten. Place the baking paper on a baking sheet. Use teaspoonfuls of dough to place small heaps 2 cm apart. Bake the cookies for exactly 10 minutes, otherwise they will become bone dry and crumbly. When they’re cold, decorate them with powdered sugar or chocolate coating, or whatever you like. If you have unexpected visitors, these cookies are quick to make.
