Gnocchi and spinach pan

Ingredients for 2 servings:

  • 1 clove(s) garlic
  • 200 g mushrooms, brown
  • 100 g baby spinach
  • 400 g gnocchi, fresh
  • 20 g hard cheese, Italian
  • 50 g tomatoes, dried
  • salt and pepper
  • oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Peel the garlic, thinly slice the mushrooms, and roughly chop the baby spinach. Then, sear the gnocchi in a large pan with about 2 tablespoons of oil for about 3-4 minutes. While the gnocchi are cooking, grate the hard cheese and slice the sun-dried tomatoes. Reduce the heat to medium and press in the garlic. Add the mushrooms and cook for another 4-5 minutes. Now add the spinach. Once the spinach has wilted, stir in the tomatoes and season the dish with a little salt and pepper. Toasted pine nuts can also be added, if desired. 553 kcal per serving.
