Gnocchi arugula salad

Ingredients for 8 servings:

  • 500 g gnocchi from the refrigerated section
  • 1 handful of walnuts
  • 3 handfuls of arugula
  • 4 tbsp olive oil
  • 5 tbsp balsamic vinegar, dark
  • 1 garlic clove(s)
  • ½ lemon(s)
  • some pepper (coarse steak pepper)
  • some salt
  • 80 g Parmesan cheese

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

with walnut, lemon, garlic, balsamic vinegar

Prepare the gnocchi according to the package instructions and place them in a shallow dish, if possible. Toss with a little olive oil to prevent the gnocchi from sticking together. Then, mix a dressing of olive oil, balsamic vinegar, crushed or finely diced garlic, lemon juice, steak pepper, and salt. Mix the sauce with the gnocchi, the previously roughly chopped walnuts, and the washed and well-shaken arugula. Top with Parmesan shavings. I came up with this combination myself and have been complimented on it at many parties.
