Gnocchi salad

Ingredients for 3 servings:

  • 500 g gnocchi, homemade or from the refrigerated section
  • ½ onion(s), finely diced
  • 2 tbsp pine nuts
  • n. B. Tomato(s), pickled dried
  • 100 g arugula
  • e.g. fresh basil
  • salt and pepper
  • Balsamic vinegar
  • olive oil

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 35 minutes

ideal as a barbecue side dish and for parties

Cook the gnocchi in plenty of salted water, drain, and rinse with cold water. Meanwhile, toast the pine nuts in a pan without oil until fragrant. Chop the sun-dried tomatoes, wash the arugula, and shake dry. Then place all ingredients in a bowl, season with salt, pepper, balsamic vinegar, and olive oil, and let stand for about an hour. Season to taste and serve.
