Potato-lime puree

Ingredients for 6 servings:

  • 2 kg floury potatoes
  • 1 tbsp turmeric (optional)
  • 125 g butter
  • 100 ml milk, warm
  • 75 ml olive oil
  • 2 limes (zest and juice)
  • ½ tsp nutmeg, grated
  • 6 garlic cloves, squeezed
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

with garlic – goes wonderfully with game

Peel the potatoes, halve them lengthwise, or quarter them depending on their size. Bring salted water (optionally with turmeric for an attractive yellow color) to a boil with the potatoes in a large pot. When they are nice and tender, drain the cooking water. Mash the potatoes—they can still be a little chunky. Now mix in the butter, warm milk, olive oil, lime juice, lime zest, nutmeg, and crushed garlic. Season with salt and pepper—and you’re done. This mash goes perfectly with game—its very slight acidity makes it seem much lighter than traditional mashed potatoes (but it isn’t). P.S.: If you omit the milk and butter and proportionally increase the amount of olive oil, this mash can also be offered to vegans.
