Gnocchi salad with zucchini and peppers

Ingredients for 4 servings:

  • 1 pack of gnocchi, approx. 400 – 500 g
  • 1 small zucchini
  • 1 bell pepper(s), red
  • 5 tbsp olive oil
  • 1 garlic clove(s)
  • 1 tbsp white wine vinegar
  • 2 tbsp tomato paste
  • 4 tbsp vegetable broth (not powder)
  • salt and pepper
  • a few stalks of basil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cook the gnocchi according to the package instructions. Wash and trim the vegetables. Thinly slice the zucchini and cut the bell pepper into small strips. Sauté everything together in 3 tablespoons of olive oil. Stir in the garlic clove, vinegar, the remaining oil, tomato paste, and vegetable broth until smooth. Mix everything together and season with salt and pepper. Garnish with the basil. Enjoy hot or cold!
