Gnocchi with bacon and arugula

Ingredients for 2 servings:

  • 500 g gnocchi
  • 500 g arugula
  • 150 g breakfast bacon, thinly sliced
  • 1 garlic clove(s)
  • 2 tbsp butter
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 50 g Parmesan
  • some salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut the bacon into strips about 1 cm wide. Wash the arugula if desired and dry it in a salad spinner. Peel the garlic clove. Melt the butter in a small glass bowl in the microwave. Press the garlic with a garlic press, add the lemon juice and mix everything together. Heat the oil in a frying pan and fry the bacon. After about 2 minutes, add the gnocchi and fry over medium heat for about 2 minutes. Then, grasp the arugula in your fist and chop it up with scissors over the frying pan and drop it into the pan. Simmer for about 2 minutes until it has collapsed. Then add the butter mixture and stir well. Season with salt and pepper, sprinkle with Parmesan cheese and serve.
