Gnocchi with carrots and zucchini

Ingredients for 4 servings:

  • 600 g gnocchi
  • 200 g zucchini
  • 150 g carrot(s)
  • 1 small onion(s)
  • 40 g Parmesan
  • salt and pepper
  • olive oil
  • some parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cut the carrots and zucchini into julienne strips. Finely dice the onion. Sauté the onion in a pan with a little oil, then add the vegetables and fry briefly, seasoning with salt and pepper. Add a little water and simmer for about 5 minutes. Meanwhile, cook the gnocchi according to the package instructions. Place the gnocchi in a colander and drain. Add the drained gnocchi to the vegetables in the pan, sprinkle with Parmesan cheese, and toss to combine. Serve on plates and garnish with parsley.
