Gnocchi with oyster mushrooms

Ingredients for 2 servings:

  • 1 pack of gnocchi
  • 200 g oyster mushrooms
  • ½ bunch of spring onions
  • 1 handful of arugula
  • ½ bag of Parmesan cheese, freshly grated or sliced
  • Salt
  • Pepper, from the mill
  • nutmeg
  • oil
  • butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook gnocchi according to the package instructions. Clean the oyster mushrooms and cut into large pieces. Use the leeks and cut them into rings. Heat oil (olive oil is not suitable) in a pan and fry the mushrooms; the darker the color, the more intense the flavor. Add the drained gnocchi, a few knobs of butter, and continue frying. Add the spring onions. Season with salt, pepper, and nutmeg. Finally, add the cleaned and halved arugula; do not fry again. Serve on plates and drizzle with Parmesan cheese.
