Gnocchi with tomatoes and arugula

Ingredients for 2 servings:

  • 600 g gnocchi, fresh or from the refrigerated section
  • 3 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp tomato paste
  • ½ bunch arugula
  • 2 tbsp Parmesan

Instructions

Working time approx. 2 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 12 minutes

Fry the gnocchi in a pan in olive oil and butter for 5-10 minutes. Then add the tomato paste and stir to combine. Season with salt and pepper, tear the arugula into small pieces, and add it. Finally, sprinkle with Parmesan cheese. You can also use basil instead of arugula.
