Ingredients for 4 servings:

  • 1 kg pork belly, streaky (Wammerl)
  • 2 large carrots
  • 2 celery bulbs
  • 4 onions
  • 6 large potatoes
  • 500 ml meat broth
  • salt and pepper
  • Caraway seeds

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Peel the carrots, celery, and onions and chop them into large pieces. Sauté the vegetables in a roasting pan without fat until they have a rich, dark color. Pour in the meat stock. Rub the pork belly with salt and pepper and sear it well on all sides. Place it on top of the vegetables, add the caraway seeds, and braise at 200°C for about 1 1/2 hours. Baste the meat with the stock every 15 minutes. After half an hour of cooking, add the peeled and roughly diced potatoes and cook with the meat. Carve the meat and serve with the vegetables.
