Goat cheese omelette with arugula

Ingredients for 2 servings:

  • 4 eggs
  • 4 goat cheese slices or 8 cm goat cheese roll
  • ½ bunch arugula
  • 6 cherry tomatoes
  • 10 g butter
  • 1 dash of cream or milk
  • Salt and pepper from the mill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Whisk the eggs with cream, salt, and pepper. Melt the butter in a pan and wait until the water has evaporated. Pour in half of the eggs. When the omelet begins to set on the bottom, add two slices or coins of goat cheese. When the entire omelet is almost set, add half of the arugula and fold the omelet. Slide the omelet onto a plate and serve with three halved cherry tomatoes. Cook the second omelet in the same way. With good tomatoes, you don’t need any dressing—the flavor should be your best.
