quick and versatile, good with salad

These cheese slices are a quick and delicious accompaniment to salads. Lamb’s lettuce tastes particularly good with them. They’re also suitable as a small starter or dessert. As with all my recipes, I combine ingredients and spices based on feeling and intuition. Therefore, there are no set spice quantities. So start with a little seasoning and adjust according to your personal taste. Cut the roll of soft goat cheese into slices about 1 cm thick. Whisk the egg with salt, pepper, and perhaps a pinch of chili. Chop the walnuts finely with a large knife. Don’t chop them too finely, otherwise they’ll lose their bite. Dip the goat cheese slices in the egg, then roll them in the walnuts, pressing the breading firmly into the crust. Heat a little clarified butter in a pan and fry the goat cheese slices over medium heat until golden brown. Arrange on a plate, dust lightly with cinnamon, and drizzle with a little honey.
