Goat cheese roll wrapped in bacon with thyme

Ingredients for 4 servings:

  • 1 cheese (goat cheese roll), approx. 10 cm
  • 4 slices of bacon
  • 2 tbsp honey, good
  • 1 sprig(s) thyme, fresh (or dried if necessary)
  • 2 slice(s) toast bread (butter toast)
  • ½ frisée lettuce
  • 2 heads of radicchio
  • 2 lemons, squeezed
  • olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First, preheat the oven to 200°C. Cut the goat cheese rolls into four equal slices and wrap them in bacon. Wash and dry the thyme, then pick off the leaves. Add them to the honey and mix well. Drizzle the honey over the goat cheese slices. Place the whole thing on a baking sheet lined with baking paper and leave it in the oven until the cheese melts. It must not melt! Then remove the cheese slices from the oven. Place the goat cheese slices on a quartered and toasted piece of toast and arrange them on a bed of radicchio and frisée with a lemon and olive oil vinaigrette.
