Ingredients for 10 servings:

  • 1 ½ bulb(s) garlic
  • 3 tomatoes
  • Salt
  • 1 pepper
  • 1 kg cheese (hard cheese or half and half dried
  • Oil (very good olive oil)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

The quantity specified here is sufficient for about 10 people and is served as an appetizer with light or white bread. It also tastes excellent with wine or beer as a snack. Peel the garlic cloves and crush them in a mortar with a little salt. (A garlic press will also work.) Peel the tomatoes and puree them. Mix both ingredients well. Boil 1 dried, very hot chili pepper in a little water and then add this water to the mixture. Grate 1 kg of hard cheese (or half and half dried goat cheese and hard cheese) and gradually add it to the tomato mixture. Finally, add enough very good olive oil (!) until it becomes a smooth mixture. Keeps well refrigerated. If the cream becomes too dry, simply add more olive oil.
