Gorgonzola sauce

Ingredients for 4 servings:

  • 150 g Gorgonzola, cut into small cubes
  • salt and pepper
  • ⅛ liter cream
  • ⅛ liter white wine
  • 1 tbsp butter
  • 2 eggs, including the yolk

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Melt the butter in a saucepan. Deglaze with wine and cream. Add the Gorgonzola and melt. Strain the sauce through a sieve. Heat briefly again, then reduce the heat. Whisk the egg yolks until smooth and stir into the sauce. Do not boil again. Season with salt and pepper.
