Gouda garlic paste

Ingredients for 6 servings:

  • 500 g cheese (Gouda, preferably young), in one piece
  • 2 tbsp mayonnaise
  • 2 cloves garlic

Instructions

Grate the Gouda coarsely or finely; I prefer finely, which makes the paste nice and creamy. Crush the garlic and add it. Mix everything with a little mayonnaise (French or Dutch is the best) to bring the mixture together. Use mayonnaise sparingly. It’s better to use a little less at first and add more as needed, as you don’t want the cheese and garlic flavors to be overpowered by the heavy mayonnaise. We like to eat the paste with grilled food, on a baguette, or directly on a steak.
